The dua before and after eating

Before eating
The Prophet صلى الله عليه وسلم taught Umar ibn Abi Salamah, then a child moving his hand about the dish, three things:
Young man, **mention Allah's name**, eat with your right hand, and eat from what is in front of you.
Sahih al-Bukhari 5376; Sahih Muslim 2022.
So what is recited is just this: بسم الله — Bismillah.
And if you forget
When one of you eats, let him say Bismillah. If he forgets at the start, let him say: **بسم الله أوله وآخره** — Bismillahi awwalahu wa akhirah.
Sunan Abi Dawud 3767; Jami at-Tirmidhi 1858. Graded sound or good by the scholars. It is not in Sahih al-Bukhari or Muslim.
"In the name of Allah, at its beginning and at its end." So if you remember halfway, the door is still open.
After eating
الحمد لله الذي أطعمني هذا ورزقنيه من غير حول مني ولا قوة
Alhamdu lillahi-lladhi at'amani hadha wa razaqanihi min ghayri hawlin minni wa la quwwah.
"All praise is for Allah, who fed me this and provided it for me, without any contrivance of mine and without any strength of mine."
Sunan Abi Dawud 4023; Jami at-Tirmidhi 3458. Graded good by the scholars.
And another established wording:
الحمد لله الذي أطعمنا وسقانا وجعلنا مسلمين
"All praise is for Allah, who fed us and gave us drink and made us Muslims."
Sunan Abi Dawud 3850; Jami at-Tirmidhi 3457. Accepted by the scholars.
What usually gets dropped
That hadith held three things, and two of them are actions: the right hand, and what is in front of you. People commonly remember the dua and leave those two out — though they arrived in the same sentence.
